Interesting Carrots, apple, cucumber & capsicum Salad with Walnuts & Feta

Ingredients:

2 carrots – grated

1 Lebanese Cucumber – diced into 1 cm pieces

½ Medium Red Capsicum – diced into 1 cm pieces

½ Red Apple or 1 orange – diced into 1 cm pieces

75 grams Low fat Feta – finely diced

¼ cup roasted chopped Walnuts

¼ cup roasted mixed nuts – Pepatos, Sunflower seeds, Sesame seeds

1 teaspoon Salt

½ teaspoon freshly ground black Pepper

1 tablespoon Balsamic Vinegar

1 tablespoon extra-virgin olive oil

Method:

Place all the ingredients in a large salad bowl and toss well. Taste and adjust seasonings.

Tips:

1.  If you slice the vegetables thinly and then use a dicer chopper, the results are effortless and quick.

This is the one I use – just don’t touch the cutting edges as the blades are super sharp.
