Quick healthy pesto
Ingredients:
2 large bunches of basil – remove only the woody portion of the stems
1 bunch of flat or curly parsley
1 punnet cherry tomatoes or 2 large juicy tomatoes chopped
1 clove of garlic – minced
¼ cup roasted pine nuts
1 teaspoon salt
½ teaspoon freshly ground black pepper
Method:
This pesto is best made in a high-speed blender as it pulverizes the stems and all. Excellent source of fibre. I know I may offend the traditionalists – but it works for me…
Cut the tomatoes roughly and place them in the blender. Put all the remaining ingredients in and blend at high speed till everything looks well blended.
Whatever you don’t need to use immediately can be stored in ice cube trays in the freezer.
Tips:
1. Freezes brilliantly!!!
2. Once frozen, the cubes should be stored in labelled zip lock bags.
