Seven Spice Chat Potatoes (North Indian)
Ingredients:
500 gms small chat potatoes - boiled and peeled
3 tablespoons of extra virgin olive oil or ghee (tastes so much better with ghee)
3/4 tsp turmeric powder
1 heaped tsp cumin powder (roasted and then powdered)
2 heaped tsp coriander powder (roasted and then powdered)
1 heaped tsp fennel seeds (sonf)
1 tbsp lemon juice or to taste
1 tsp salt
1 to 2 green chillies – minced – adjust this to how hot you would like it
1/2 cup chopped fresh coriander
Method:
Gently press each potato between the palms of your hands, just till you feel the potatoes losing shape.
In a non-stick pan add the oil / ghee and potatoes. Now sprinkle all the rest of the ingredients over the potatoes - except the fresh coriander.
Cover and cook on a low heat for 10 minutes. Gently turn the potatoes and cook for another 10 minutes.
Place on a serving dish and sprinkle with the fresh coriander.
Serve with chapatti or lentils and rice.
Serves 4 to 6.
